Bailey's Mint Chocolate Cupcakes


These were made for my friend Chris' birthday.  They are chocolate cupcakes filled with white chocolate and Bailey's Hint of Mint Irish Cream, frosted with mint swiss meringue buttercream, and then topped with a Bailey's cake bomb.  YUM!  




They were very decadent and perfect with a cup of coffee.  Who knew cupcakes could be so grown up!  Thank you Lots of Sprinkles for the recipe.

Ivy's Cupcakes



I made these cupcakes for Ivy who was bringing them to a farewell party for a friend.  She wanted something elegant with a variety of flavors but only needed two dozen cupcakes.  I suggested her ordering two different kinds of cupcakes and toppings, and then interchange them.  So she requested chocolate/ chocolate, vanilla/ chocolate, vanilla/ vanilla, and chocolate/ vanilla.  

She didn't ask for any decorations, but I wanted something small and pretty for the cupcakes.  She said flowers and colored sugar was okay.  So I made white flowers out of fondant and painted one set light pink and the other dusted with gold powder.  



The vanilla frosting had the golden flowers sprinkled with clear crystal sugar.  



The chocolate ones had the pink tinted flowers with silver dragees.  




Ivy has written back and said the cupcakes were a hit at the party.  Thanks, Ivy!

Richmond, BC's SPCA Cupcakes

Blueberry/ vanilla cupcakes



Last weekend I made over 100 cupcakes for Richmond's SPCA.  It was for their new location's first year anniversary.  I made blueberry/ vanilla cupcakes, double chocolate cupcakes, orange chocolate cupcakes, and vanilla/ vanilla cupcakes (some which were decorated with chocolates made by my sister Jess).
